Marinated Grilled Salmon

You will need:

1 one-pound fresh wild salmon filet with the skin on
1/4 cup reduced sodium soy sauce
1/3 cup rice vinegar
1/4 cup water
1 tablespoon extra virgin olive oil
1 1/2 tablespoons organic honey
1/4 cup red onion, finely diced
1/2 teaspoon dill weed
1 1/2 tablespoons fresh lemon juice

To Prepare:

Place the salmon, skin side up in a glass baking pan. In a small bowl combine the soy sauce, vinegar, water, oil, honey, and onion. Pour the mixture over the fish and marinate in the refrigerator for 1/2 to 1 hour. Baste the fish frequently.

Transfer the fish to a medium-high grill, skin side down, and discard the remaining marinade. Grill the fish for 10 minutes per inch, flipping it over halfway through.
